Beetroot chocolate bars

Guilt free dessert

When we think of beetroot we usually think about salad, maybe pickled beetroot or a soup made of it. But have you ever really thought about a chocolate cake that has beetroot as the main ingredient? I dare to say it's not only gluten free, but it's also guilt free. However, you'll love it.

  • 1/2 cup beetroot puree
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup almond flour or grounded almonds
  • 2 cups coconut flour
  • 2 tbsp raw cocoa
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup chocolate chips or chocolate
  • 1/4 cup coconut drink
  • 100g dark chocolate – 75% cocoa
  • *1 cup = 240ml

How to do it

  • Grease baking tray (20x20cm) and put baking paper to cover the bottom
  • Heat the oven to 180°C
  • Mix wet ingredients: beetroot puree, peanut butter, honey, eggs, and vanilla
  • In another bowl mix together dry ingredients: flours, cocoa, baking powder, baking soda, salt, cinnamon, and chocolate chips
  • Stir together wet and dry ingredients and put in the baking tray
  • Bake around 30 minutes or until a toothpick comes out clean
  • Please have patience and let it cool in the tray
  • Cut in bars of the desired size
  • Melt chocolate with some coconut drink and put on top of each bar
  • If the cake is completely cooled, you can warm it in the oven or in the microwave so the chocolate melts before serving. Serve it as a dessert with some tea or coffee.
