Beetroot pancakes with avocado

These fun pink beet pancakes are quick to make. Full of healthy beets, naturally sweetened and can be easily made gluten free. Don't forget to add your favourite topping, in this recipes we used smashed avocado and walnuts!

Beetroot pancakes topped with avocado mash and apples

Ingredients:

  • 1 big beetroot (approx. 400 g)

  • 1 carrot

  • 1 clove garlic

  • 1 dl milk

  • 1.5 dl flour

  • 1 dl oats

  • 1 shallot / or normal onion

  • 1 tsp. salt and a bit of pepper

  • Ideas for topping: Walnuts, avocado smash, apples or whatever you like!

Instructions:

  1. Start with getting all your ingredients out. Wash and peel all your greens and finely grate the beet, garlic, carrot & shallot into a large bowl.

  2. Mix it with eggs, oats, milk, flour, salt and pepper and let it rest for 10 minutes.

  3. While you wait you can prepare some toppings if you’d like.

  4. In a pan, add some butter/olive oil. Add two tablespoons of dough for one pancake. Turn it down to medium hot and let it cook for approx. 2-3 minutes on each side.

  5. Repeat till all the dough is gone and serve with whatever you like on top.
