Bell peppers & feta salad

Try making this refreshing salad. The combination of sweet bell peppers and tangy feta is unique! Really easy to make and quick. Serve it with some warm homemade bread or crackers.

Ingredients:

  • 3 medium bell peppers

  • 2-3 cloves of garlic

  • fresh parsley

  • olive oil

  • lemon

  • balsamic vinegar

  • salt

  • pepper

  • feta cheese (optional)

Instructions:

  1. Warm the oven to 200°C.

  2. Wash and dry whole bell peppers and line them like that on the baking paper and put them in the oven and roast them for approximately 45 minutes. You can turn them around.

  3. They will most probably get black parts from roasting but don't worry, just toss and turn them. Those black stains won't have any bad taste, and it will go away later when peeling peppers.

  4. When peppers are done, place them in a bowl or a plate and cover with a plate so they steam a bit. It will be easier to peel them. Once they have cooled a bit you peel the skin and clean the pepper from the seeds.

  5. Cut peppers as desired. I like to cut them in stripes. In a plate or a bowl prepare the dressing - combine sliced garlic, olive oil, lemon juice, salt, pepper, balsamic vinegar, and chopped parsley. Taste and then let it sit for a few minutes.

  6. Then, add the peppers and bathe them in the dressing. Let it cool in the fridge. Before serving crumble some feta cheese on top and serve as desired.
