Cabbage Stew
The most wonderful thing about a stew like this, is that it allows for a lot of freedom - whatever kind of cabbage you prefer, you can use just what you like. The raisins, honey and broth all help to give the dish a lot of flavour and depth, and sometimes you just need a dish that you can let take care of itself on the stove.


Ingredients

½ large cabbage

4 carrots
-
1 can chickpeas
-
4 small tomatoes
-
1 onion
-
1 zucchini
-
60 ml raisins
-
2 tsp honey
-
500 ml broth
How to make it

In a large pot, caramlize the onions - be careful to not burn them.

Prepare all of the veggies, by cutting them into smaller chunks.

Add the cabbage, carrots, tomatoes, zucchini and broth. Simmer for 1 hour.

Add the chickpeas, honey and raisins and cook for another 20 minutes.

Serve by itself, or topped over rice or couscous grain.
