Filled zucchinis

  • 4 small zucchinis
  • 300g cherry tomatoes 
  • 200g couscous
  • 400ml vegetable stock
  • 150g feta 
  • 150g greek jogurt 
  • 2 garlic cloves
  • Olive oil
  • Salt & pepper 
  • Herbs

How to do it

  1. Preheat the oven to 200 degrees. Cut the zucchini in half and hollow out with a spoon, put the flesh aside. Season the zucchini with salt and pepper, drizzle a little olive oil on the halves and put them in the hot oven for 10 minutes. 
  2. In the meantime, cook the couscous with the vegetable stock. Cut the garlic and the zucchini flesh in small pieces. Cut the cherry tomatoes. 
  3. Fry the zucchini and garlic and add the tomatoes. Season everything with salt, pepper and herbs.
  4. Crumble the feta and mix it with the greek jogurt, salt & pepper. 
  5. Put out the zucchini-halfs and fill them with the couscous-mix. Top them with jogurt-feta-sauce and put them in the oven for another 5-10 minutes. 
  6. Enjoy! :)
