French onion soup
With bread-lid and melted cheese

Ingredients

7-8 onions

1 tablespoon of butter
-
1 tablespoon of sunflower oil

1,5 liter of vegetable stock

1 deciliter of white wine (if you have any leftover. If you don’t, you can leave it out)

1 sprig of thyme
-
3 bay leaves
-
4 slices of bread
-
100 grams of mozzarella

Salt
-
Pepper
How to do it

Turn on the oven, to 220 degrees Celsius

Cut the onions into rings

Put the sunflower oil in a big pot

Put all the onions in the pot, and then add the butter

Sauté the onions, until they are clear, this takes about 10 minutes

Add white wine, vegetable stock, thyme and bay leaves to the pot

Simmer for about 20 minutes

Toast the slices of bread in the oven for about 5 minutes

Take the bread out, put it in a baking pan, and drizzle the cheese over it, until the surface of the bread is covered

Put in the oven for about 5-10 minutes, until the cheese is melted, and has a bit of colour

Put the soup in serving bowls, and top with the cheesy bread
