Jerusalem artichoke chips

Jerusalem artichoke chips are a fabulous healthy snack. Really quick to prepare. These roots are originally from North America. They are great in the oven as they become sweeter. Try replacing  potatoes with these goodies!

If you want to add some extra variety, and get full use of your oven while it's warm, then you should consider also making these amazing beetroot chips. Here you can also find a recipe for a nice goatcheese-dip!

Jerusalem Artichoke Chips served on a small plate and sprinkled with saltIngredients:

  • 400 g Jerusalem artichoke

  • 2-3 tbsp olive oil

  • Some dried rosemary or thyme

  • Salt 


  1.     Preheat the oven, 200 degrees Celsius

  2.     Peel and wash the Jerusalem artichoke

  3.     Cut them as thinly as possible, approx. 1-2 mm. 

  4.     Put the slices in a bowl with olive oil, salt and thyme

  5.     Arrange the chips side by side, on a baking sheet 

  6.     Bake the chips about 15 minutes before you flip/turn them.

  7.     Additionally, bake about 10-15 minutes. 

  8.     Cool and serve!
