Kumpir with winter veggies

Kumpir - the Turkish potato you have to try!

It’s a baking potato with cheese & butter. You can serve this delicious potato with.. EVERYTHING. We had it with various winter veggies and a fresh dip. You can vary the recipe, serve it with your favourite veggies, dips, pickles, greens,... there are no restrictions. Or you make this recipe with sweet potatoes instead :)

Ingredients

For the potatoes 

  • 2 big baking potatoes 
  • 50g cheese (cheddar, gouda,.. Take what you like ;))
  • 2 tsp butter
  • Salt & pepper

For the dip

  • 4 tsp creme fraiche
  • ½ lemon
  • ½ orange
  • Salt & pepper 

For the veggies 

  • Brussel sprouts
  • Beetroot
  • Romanesco 
  • Fennel 
  • Broccoli 
  • Salt & pepper
  • Olive oil

How to make it 

  1. Preheat the oven to 200 degrees.
  2. Prick the potatoes a few times with a fork, rub the potatoes with some olive oil and put them in the oven for about 45 minutes (until they are soft)
  3. Cut the beetroot and fennel into small pieces. Cut the Romanesco, Brussels sprouts & broccoli into florets. Mix the vegetables with olive oil, salt and pepper and put them in the hot oven for 20 - 30 minutes.
  4. Mix the dip from the creme fraiche, the juice of half a lemon & half an orange, salt & pepper. 
  5. When the potatoes are soft: Cut the potatoes in half and loosen the inside with a fork. Mix in the butter & cheese, salt & pepper the potatoes. Put the potatoes in the oven again for 2-3 minutes. 
  6. Serve the potatoes with vegetables and dip.
