Mini pies with salad & capers

These mini pies are simple to make and filled with healthy ingredients, they are the perfect appetizer to enjoy during a summer picnic.

Ingredients:

  • 1 layer of ready-made round puff pastry

  • some leaves of salad, washed and sliced

  • 12 olives in oil

  • 1 tbsp of small capers in vinegar

  • 1 tbsp of pine nuts

  • salt

Instructions:

  1. Preheat the oven to 200 °C.

  2. Use a 9 cm-diameter round pastry cutter to cut out 2 discs.

  3. Place 3 olives, some cappers, some pine nuts and a bit of sliced salad on one disc.

  4. Cover with the other disc and seal really well around the edge with your fingers.

  5. Place it into a lined tray. Continue with the remaining dough. Brush the surface with oil and scatter sesame seeds on.

  6. Bake for about 10 min, until lightly golden on the top.
