Mushroom & Cauliflower Pasta

Ingredients:
- Some plant-based butter or oil
- 1-2 onions
- 1-2 cloves of garlic
- 100 g enoki mushrooms
- 150 g oyster mushrooms
- ½ cauliflower, “grated” or chopped in smaller pieces
- 1 dl bouillon water (1 cube of bouillon (vegetables) mixed with 1 dl hot water)
- 2 dl plant milk
- 2-3 dl plant-based cuisine cream (I used Alpro soya cuisine)
- Salt / Pepper
- Pasta or spaghetti, cooked
- Chili flakes
- Some fresh herbs, ex. parsley, basil or cilantro
- Salt / Pepper
How to:
- First, you need to prepare the pasta and boil it in salted water, and then save it for later.
- Chop the onions and garlic into smaller cubes.
- Put it on a big pan with some oil or butter and fry a few minutes
- Add enoki mushrooms, oyster mushrooms, and cauliflower and fry about 3-4 minutes
- Add bouillon water, plant milk and plant-based cuisine cream
- Turn the cooked pasta gently around with a the sauce
- Taste with salt and pepper and let it simmer a few minutes
- Arrange on plates and sprinkle with fresh herbs, chili flakes, salt, and pepper.
- Enjoy!
