Nectarine & blueberry crumble
This nectarine and blueberry crumble is the perfect summer dessert. The best combination of sweet and sour. For extra flavour add your favourite ice-cream!


Ingredients:
Filling:

5-6 medium sized nectarines
-
100-125g blueberry
-
Juice from ½ lemon
-
1/4 cup sugar
-
1 tsp. vanilla extract
-
1 tbsp. all purpose flour
Crumble:
-
1/4 cup oats
-
1/2 cup all purpose flour
-
1/3 cup brown sugar
-
1 tbsp vanilla sugar
-
1/2 tsp. salt
-
1/2 tsp. cinnamon (optional)

60g butter, chilled and into cubes

Handful chopped almonds (optional)
Instructions:

Turn on the oven to 180°C

Combine all the ingredients for the filling in a baking dish

In another bowl, combine all the ingredients for the crumble and lastly add the butter cubes
-
It’s easier to use your hands to knead the ingredients together (butter and crumble)

After this take the baking dish with the filling and cover it in the crumble mixture
-
Bake for around 40-45 minutes until it has become golden brown

Serve with some vanilla ice cream
