Ovenbaked butternut

Here’s what you’ll need:

  • 1 butternut squash
  • Salt/pepper 
  • Olive oil
  • A bunch of Chinese cabbage
  • 1 Cucumber
  • 2 tbsp apple cider vinegar
  • Salt

Here’s how to cook it: 

  1. Cut butternut squash in half, lengthwise. Sprinkle with salt and bake at 180 degrees for 1 hour. 
  2. Prepare salad mix of thinly cut Chinese cabbage and thin slices of cucumber. Add vinegar and salt. 
  3. Serve the squash topped with green salad.
