Pearl barley & fennel

Try this combination of pearl barley, fennel and leek. We love it because is super healthy, quick and fresh with a dash of lemon and olive oil!

Ingredients:

  • 2 pc fennel

  • 2 medium sized leeks

  • 1 lemon

  • 150 g pearl barley

  • ½ dl olive oil

  • 1 bundle herbs - dill, chives, tarragon, chervil 

  • 15 g butter

Instructions:

  1. Halve the fennel and cut them into as fine pieces as possible, you could use a mandolin iron to do this. Put them into ice water for about 15 minutes. 

  2. Clean and rinse the leeks thoroughly. Cut them lengthwise and after cut them into fine pieces. Steam them for 30 seconds under boiling water and add water and butter.

  3. Cook the pearl barley in salted water for around 15-20 minutes and let it cool after.

  4. Put it all together and use half the juice of a lemon, add olive oil and the chopped herbs.
