Potato salad with parsley-pesto

Ingredients:
Pesto:- A big bundle of parsley (about 100 g)
- ½-1 dl Oil
- 1 dl walnuts or pine nuts
- ½ dl yeast flakes (gærflager)
- ½-1 tsk. Chili Flakes
- Salt
- Pepper
- ½ small Radicchio salad
- 120 g spinach, fresh
- 400-500 g potatoes
- Some rosemary
- Chili Flakes
- Salt
- Pepper
How to:
- First, wash and boil the potatoes, and let them cool after boiling.
- Meanwhile you will make the pesto
- In a blender add all the ingredients (for pesto) in a blender.
- Blend and taste with more yeast flakes, oil, chili flakes, salt or pepper.
- Wash and chop Radicchio salad and spinach in big pieces and put it in a big bowl.
- Mix the cold potatoes with parsley pesto, and add it in the salad bowl.
- Enjoy
