Potato salad with parsley-pesto

A serving of potato salad with parsley-pesto

Ingredients:

Pesto:
  • A big bundle of parsley (about 100 g)
  • ½-1 dl Oil
  • 1 dl walnuts or pine nuts
  • ½ dl yeast flakes (gærflager)
  • ½-1 tsk. Chili Flakes
  • Salt
  • Pepper
Salad:
  • ½ small Radicchio salad 
  • 120 g spinach, fresh
  • 400-500 g potatoes
  • Some rosemary
  • Chili Flakes
  • Salt
  • Pepper

How to: 

  1. First, wash and boil the potatoes, and let them cool after boiling. 
  2. Meanwhile you will make the pesto
  3. In a blender add all the ingredients (for pesto) in a blender. 
  4. Blend and taste with more yeast flakes, oil, chili flakes, salt or pepper. 
  5. Wash and chop Radicchio salad and spinach in big pieces and put it in a big bowl. 
  6. Mix the cold potatoes with parsley pesto, and add it in the salad bowl.
  7. Enjoy
