QUINOA SALATE WITH PEANUTBUTTERDRESSING & FALAFEL

Quinoa makes for a great addition in salads, and in this recipe you can have a meal ready in less than 30 minutes! The peanutbutterdressing gives a great deep flavour to the salad, and together with falafel you're sure to be full. Use this recipe as a side, for a light lunch, or a complete dinner meal.

Bowl with quinoa salate, falafel and cabbage

Ingredients:

  • 75 g of quinoa

  • 1 large tomato

  • 2 large handfuls of cabbage

  • 1 small red pepper

  • 3 mini cucumbers

  • 1 tbsp peanut butter

  • 1 tbsp soyasauce

  • 1 tbsp tahin

  • 2 tablespoons olive oil

  • Salt

Instructions:

  1. If you want falafel, make them first.

  2. Boil 1 part quinoa to 2 parts water. The cooking time is approx. 15 min. Remove the pan from the heat and let it rest for 5-10 minutes.

  3. Cut out all the vegetables to the desired size, and place in a large bowl. You can place the cabbage in a bowl and pour boiling water over it, if you prefer it to be less crunchy - just make sure to drain it from the hot water after it has rested for a few minutes.

  4. Mix 1 part peanut butter, 1 part soy, 1 part tahin, 2 parts olive oil and some salt together and pour it over the quinoa. Mix it all together and add some herbs in the form of lemon balm, basil, parsley or cilantro.
