Roasted kale salad
Ingredients
Pickled onions
- 2 red onions
- 2 dl applecidervinegar
- ½ dl sugar
- 1 teaspoon of peppercorns
The salad
- 4 big kale leaves
- 1 handful of roasted walnuts
- 1 handful of pickled onions
- 40 g goat cheese
- 1 tablespoon olive oil (and a bit of butter, if you feel like it!)
How to make it
Pickled onions
- Cut the onions in thin slices and place in a clean glass. Boil sugar, vinegar and peppercorns together and pour it over your onions. Store in the fridge until you need it
The salad
- Roast your walnuts on a dry pan, with a bit of salt. Put aside after approx. 3-5 minutes
- Wash your green kale and remove the kale leaves from the stems and cut into strips
- Add oil/butter on a warm pan, and toss your kale around for approx. 5 minutes. I turned my kale a couple of times, and added a bit of salt and pepper
- Serve right away with walnuts, pickled onion and some small pieces of goat cheese
