Shiitake Wonton Soup with Pak choi

Ingredients: 

Wontons: 

  • 100 g mushrooms (I used shiitake)
  • Grated ginger to taste
  • Chili to taste
  • 1 tbsp flavorless oil
  • 1 shallot
  • 1 spring onion
  • 1 handful cilantro
  • I also used 10 cm leek (the bottom part)
  • 2 tbsp water
  • 1 tbsp soy
  • 25 wonton wrappers (u can buy it in Thai or Chinese supermarkets).

Soup: 

  • 1 liter veggie or veggie stock
  • 2 tbsp fish sauce
  • 1 tbsp soy
  • Black pepper
  • A chunk ginger (sliced)
  • 1 spring onion
  • Cilantro roots (optional)
  • Pak choi
  • Egg noodles

Instructions:

  1. On low heat fry 1 shallot, 1 small spring onion and a bit of leek in butter. When it is light golden add the finely chopped mushrooms. After 1 minute add 1 tbsp soy and 1 tbsp water Still on low heat. Turn off the heat when u like the texture.
  2. You can add a little bit of what you want, but I added some grated ginger, chili powder and chopped cilantro. Taste and see what’s missing. 
  3. Then make the soup. Add 1 l stock to a pot and add ginger, shallots, cilantro roots or stems and peppercorns. Let it boil for 10 minutes. Then taste the stock and add fish and soy sauce to taste.. maybe also some sugar and lime juice.. how much depends on the stock - Turn off the soup and strain it.
  4. Wrap the wontons. See how it’s done on YouTube.. u can do it in so many ways. Then cook egg noodles. Then cook the wontons in water (the filling is cooked so it will only take maximum a minute).
  5. Then bring the soup to a boil and add some of the bok choy.. let it cook in the soup until u like the texture.
  6. Mix everything together and sluuurp.. u can serve it w cilantro, chili oil or chili flakes.
