Spicy Pumpkin Laksa

Laksa is a type of soup which is widespread in Southeast Asia. The word "laksa" actually originates from the ancient Persian word for noodles - which makes sense, since that is one of the main ingredients in this dish! If the autumn days are getting gray, and you need some spice to warm you up, this is definitely the dish to go for!

SOUP - 4 SERVINGS - 45 MIN - EASY

Spicy pumpkin laksa in a bowl

Ingredients 

  • 1 red onion, cut into thin wedges 

  • 1 tbsp minced ginger 

  • 3 cloves of garlic, minced

  • 6 teaspoons red curry paste

  • 1 can of coconut milk

  • 1.5 cup vegetable stock

  • 1 medium pumpkin, peeled and chopped

  • 1 bunch of Swiss chard

  • 1 tbsp soy sauce 

  • 200 grams noodles

  • 1 lime

Optional Toppings: 

  • roasted peanuts, chopped

  • fresh coriander

  • 1 spring onion, sliced

How to make it

  1. Heat 1 tbsp olive oil in a large saucepan over a medium heat and add the onion. Cook until soft. Add the ginger and garlic and fry for 2 minutes. Add the red curry paste and fry for 1 minute. Add the coconut milk and vegetable stock and bring to the boil. Add the pumpkin and cook until soft and tender.

  2. Meanwhile, bring a large pot of salted water to the boil. Add the noodles and cook until just tender. Drain, rinse in cold water and drain again. 

  3. Add the Swiss Char stalks to the soup and cook until just becoming tender. Next add the green leafs from the swiss char and cook for 1 minute. Just before serving, add the soy sauce and juice from 1 lime. 

  4. Divide the soup between bowls, add noodles and serve with lime wedges, chopped peanuts, fresh coriander, and slices of spring onion.
