Summer Coleslaw
This vibrant spring coleslaw salad is really easy to make, tasty and refreshing! Try combing it with greek yogurt for a delicious dressing. This dish is fantastic on its own for lunch or as a side for dinner.


Ingredients:

3 medium carrots
-
1 small apple
-
½ red cabbage
-
1 fennel
-
2 spring onions
For the dressing:
-
3 tbsp mayo
-
1 cup greek yogurt
-
juice of ½ lemon
-
1 tsp mustard
-
1tsp honey or maple syrup
-
salt
-
pepper
Instructions:
-
Cut all the veggies into sort of stripes, don't grate anything but carrots
-
Grate carrots along the longer side and on a big grater
-
Try cutting spring onions lengthwise as well
-
Combine all the ingredients for the dressing

Add the dressing to salad and mix it well
-
Refrigerate and serve along with some roasted potatoes, grilled veggies or cheese
