Summer salad

Vibrant bowl with fresh greens and veggies. This salad incorporate the flavours of the season with juicy peaches.

Summer salad with fresh veggies and fruits


  • 400-500 g new potatoes (nye danske kartofler)

  • 1 small salad head or 125g mixed salad 

  • 2-3 small nectarines/peaches

  • 2 big tomatoes

  • 1 big avocado

  • 100 g raspberries, fresh

  • 2-4 tbsp. sunflower seeds, optional: roasted

  • Optional: cress 


  1. Put the potatoes in a pot and cook till they are tender. Keep their skin on. 

  2. While they are cooking, prepare the salad, starting with chopping the salad

  3. Cut the nectarines/peaches, tomato and avocado into small pieces 

  4. When the potatoes are cooked, pour cold water over them 

  5. Cut the potatoes into quarters and put them into a serving bowl with the other vegetables 

  6. Carefully put the raspberries and sunflower seeds into the bowl and mix it all together 

  7. Sprinkle cress on top 

  8. Serve the salad as a main dish or as a side dish to your dinner
