Sweet Potato With Roasted Chickpeas

This delicious, fresh, healthy, and vegan sweet potato recipe with crispy roasted chickpeas will make ur day better. A perfect dish for a quick and healthy dinner, as well as a great side. Sweet Potatoes are filled rich in vitamin C and vitamin B6, which is important for the brain and keep you healthy.

Ingredients:

Stuffed sweet potatoes

  • 1 sweet potato/person

  • Fresh parsley

  • Roasted chickpeas

  • Tahin dressing

  • Pomegranate seed

Roasted chickpeas

  • 1 can of chickpeas (drained & precooked)

  • 1 tbsp. olive oil

  • 1 tsp. cumin

  • 1 tsp. paprika

  • Salt, pepper

Tahin dressing

  • 2 tbsp. tahin

  • 2 tsp. peanut butter

  • 1 small garlic, pressed

  • Juice from ½ lemon

  • water

Instructions:

  1. Begin with turning your oven on 200 degrees. Rinse your sweet potato, cut a cross in it, and wrap it with foil. Give it approx. 45-50 minutes in the oven (when hot)

  2. Drain your chickpeas and mix them with olive oil, paprika, cumin, salt & pepper. Roast for approx. 10 minutes on a middle hot pan. Stir regularly. Set aside hereafter

  3. Mix your Tahin dressing and adjust with water. It should be a nice smooth dressing

  4. For serving: Place your sweet potato on a plate. Top with roasted chickpeas, pomegranate, Tahin dressing and fresh parsley. Enjoy!
