Tomato and Plum Salad

This delicious salad is the perfect dish for a light and easy meal. It keeps you warm and makes you feel refreshed afterward.

Salad of tomatoes and plums

Ingredients:

  • 3 plums cut into quarters 

  • 8 cherry or plum tomatoes cut in half

  • Leek or spring onion

  • Olive oil

  • 1 tbsp Balsamico

  • Salt, a pinch

  • Pepper, a pinch

  • Fresh basil - 5-10 leaves

  • Nutritional yeast 1 tsp.

Instructions:

  1. Start by sprinkling the tomatoes with a pinch of salt.

  2. Add to a baking sheet and bake in the oven at 90 degrees for around 2 hours depending on the sizes. This will dry it out and intensify the flavour. Cool down.

  3. Mix together tomatoes and plums with olive oil, balsamic, and thin slices of leek. Top of the salad with basil, pepper, salt and nutritional yeast.
