Apple crumble cake

Fruitcakes are the best! The freshness of the apples paired with crispy crumbles is just delicious. You can vary this recipes with other fruits like pears or plums as well.

One of the wonderful things about this recipe is that you can personalize it by adding your favorite apple sort. Golden Delicious, Elstar, Rød Ingrid Marie, Belle de Boskoop and so many others, whether you prefer the juicy and acidic or the sweet and crisp, the choice is all up to you. For some extra luxury you can also pair the apple crumble with a scoop of ice cream, or a topping of skyr or sour cream if you want something a bit more tangy.


Ingredients for the dough

  • 100g butter

  • 100g sugar

  • 150g flour

  • Salt

  • 3 eggs

  • ½ lemon 

  • 2 tsp baking powder  

  • 6 apples 

  • Cinnamon 

Ingredients for the crumble 

  • 120g butter

  • 150g flour

  • 100g sugar

  • 1 packet of vanilla sugar

  • Cinnamon

How to make it 

  1. Preheat the oven to 180 degrees convection

  2. Prepare the crumbles: Knead all ingredients together (cinnamon according to preference) and crumble the dough. Put the crumbles in the fridge. 

  3. Peel the apples, cut them into small pieces and mix them with the juice of half a lemon and some cinnamon. 

  4. For the dough: mix butter with sugar, vanilla sugar and a pinch of salt until creamy. Add the eggs and beat well. Then add the flour & baking powder and mix only until a homogeneous dough is obtained. 

  5. Put the dough into a greased form, smooth it down a bit and spread the apple slices on top. Spread the crumbles on the cake.

  6. Put the cake in the oven and bake for about 35-45 minutes.
