Cabbage Stew

The most wonderful thing about a stew like this, is that it allows for a lot of freedom - whatever kind of cabbage you prefer, you can use just what you like. The raisins, honey and broth all help to give the dish a lot of flavour and depth, and sometimes you just need a dish that you can let take care of itself on the stove.

  • ½ large cabbage

  • 4 carrots

  • 1 can chickpeas

  • 4 small tomatoes

  • 1 onion

  • 1 zucchini

  • 60 ml raisins

  • 2 tsp honey

  • 500 ml broth

How to make it

  1. In a large pot, caramlize the onions - be careful to not burn them.

  2. Prepare all of the veggies, by cutting them into smaller chunks.

  3. Add the cabbage, carrots, tomatoes, zucchini and broth. Simmer for 1 hour.

  4. Add the chickpeas, honey and raisins and cook for another 20 minutes.

  5. Serve by itself, or topped over rice or couscous grain.
