Orange Cake

So indulgent, deliciously sweet and with a light hint of citrus - I am sure just one more small piece wouldn't hurt. This cake is decievingly easy to make, and gives you full value out of your oranges! It can easily be served as it is, or together with some sour cream, lemon curd or fresh slices of orange, your imagination sets the limits.

  • 125g all purpose flour

  • 200g sugar

  • 1/2 tsp salt

  • 150g butter

  • 2 big eggs + 1 extra big egg white

  • 1,5 tbsp fresh orange zest

  • 3 tbsp juice of orange and lemon

  • 1 tsp vanilla extract

For the glaze:

  • 95g powdered sugar 

  • 1,5 tbsp juice of orange and lemon

  • 2,5 tbsp fresh orange zest

    How to make it

    1. Preheat the oven at 180°C. Mix dry ingredients and add the butter at room temperature. You can mix it by hand or a stand mixer on a low speed until you get a sand like texture. 

    2. In another bowl, whisk together eggs, orange/lemon juice and vanilla extract

    3. Combine dry and wet ingredients and mix until you get the smooth texture.

    4. Line the baking tin with baking paper and pour the mixture in.

    5. Don't use too big of a tin, otherwise the cake ends up being too thin. For this recipe the tin shouldn't be bigger than 25x25 cm.

    6. Bake for exactly 25 minutes in the preheated oven at 180°C.

    7. In the meantime make the glaze by combining powdered sugar, lemon zest and orange/lemon juice.

    8. When the cake is slightly cooled, spread the glaze and leave it to cool completely.

    9. When serving you can sprinkle with more powdered sugar.
