Potato puree with caramelized onions and mushrooms

Don't underestimate this simple dish, because it is way more filling than what you might first think! If you have loads of potatoes, and are unsure about what to do with them, then this is the solution for you. Level up your ordinary potato mash by introducing mushrooms, caramelized onions and lots of other goodies!

  • 1kg potatoes

  • 1 garlic

  • 2 large onions

  • 100g enoki mushrooms (or alternatives)

  • 2 tbsp soja sauce

  • 1 tbsp sweet and sour sauce

  • butter

  • milk

  • 1 tbsp hummus

  • salt

  • pepper

  • chives

  • olive oil

How to make it

  1. For the garlic and potato puree you need to oven roast whole unpeeled garlic for about 45 minutes

  2. Once the garlic is done just peel it and mash it with a fork for a bit - Whole roasted garlic has the best sweet taste

  3. For potato puree, peel and cut potatoes in cubes and boil in salty water (just like you usually do)

  4. While potatoes are boiling, prepare the onions. Cut them in thin slices. Warm some olive oil and saute onions. While doing so, add just a little pinch of salt and pepper to it and just 1 or 2 tbsp of water.

  5. Once the water has evaporated and the onions are starting to caramelize after about 10 minutes, add soja sauce and sweet and sour sauce to onions.

  6. Once the onions look ready, you can add the mushroom and just sautee them for a little bit.

  7. When potatoes are done cooking, strain them and make your regular potato puree by adding butter, milk, salt, pepper and, in this case, mashed garlic and a spoon of hummus. Mash well with a potato masher. Never use a stick mixer or anything like that because it can get too sticky, and we don't want that. Season to taste

  8. Serve potatoes with onions and mushrooms and sprinkle with some olive oil and chopped chives
