Roasted potatoes and zucchini refined with rosemary

A wonderful easy and cheap dish made with roasted potatoes and zucchinis. Refined with onions and rosemary. Topped with nutritional yeast and mayonnaise.

  • 1 onion

  • 4 potatoes

  • 1 zucchini

  • Salt and pepper

  • Thyme


  • Nutritional yeast

  • Mayonnaise


  1. Peel the potatoes and cook them for about 20 minutes. Afterwards cut into slices.

  2. Meanwhile cut the Zucchini into slices. Remove the peel from the onion and chop finely. Wash the thyme and chop finely.  

  3. Melt 1 tbsp coconut oil in a pan and fry the onions for 1 minute then add the potato and zucchini slices and the rosemary. Roast by medium heat for about 5 minutes until they become golden brown. Refine with salt and pepper. 

  4. Serve the vegetable dish with some olive oil, mayonnaise and nutritional yeast.
