Smashed cucumber salad (Pai Huang Gua)
INGREDIENTS:2 tbsp soy
1 tbsp fish sauce (or just soy if u want it vegan)
2 tbsp sesame oil
1 tbsp rice vinegar
1 tsp sugar
2 garlic gloves, grated n then chopped to a paste
1 shallot, finely chopped
300 g cold cucumbers (preferably small ones)
Chili to taste
HOW TO MAKE IT
1) Mix the soy, fish sauce, sugar, vinegar in a bowl. Then add the garlic “paste” n the chopped shallot.
2) Then slice the cucumbers in half n remove the soft part w a spoon (u do not need to remove all of it).
3) Then smash them down with a side (wide) part of knife a few times until they are broken.
Then add the pieces to the bowl.
4) Add chili n cut cilantro as well.. mix it well n ur ready to eat 💚🥒
