Spinach and artichoke pizza

  • 1 ball Homemade Pizza dough (or store bought pizza base) 

  • 2 cloves garlic, peeled and thinly sliced. 

  • 1 tbsp olive oil 

  • 2 cups spinach 

  • 1/2 cup chopped artichoke hearts (I used fresh artichokes but you can also buy them canned!)

  • 1/2 cup mozzarella 

  • 2 tbsp parmesan 

  • lemon zest from 1/2 a lemon 


  • chilli flakes, more parmesan and fresh thyme 


  1. Heat oven to 240 degrees (C) and line a baking tray with baking paper. 

  2. On a lightly floured surface, using your hands shape the pizza dough into a large oval, going as thin as you can but without creating holes. I also like to create a thicker border. Then place on the baking paper-lined baking tray. 

  3. Quickly sauté the spinach until wilted. 

  4. Brush 1 tbsp of olive oil onto the prepared dough and begin to add your toppings. Start with the mozzarella, then the spinach, artichokes and garlic slices. Next sprinkle over your lemon zest, parmesan, sea salt and some cracked pepper. 

  5. Bake until the crust is golden brown, 10 to 12 minutes. Top with some chilli flakes, more parmesan and fresh thyme!
