Squash Cake with Cream Cheese

The new year might have just begun, but don't forget to treat yourself now and then. This cake is filled with squash, which helps to give it lots of extra flavour, and with a light cream cheese on top, you shouldn't feel guilty if you simply need to have a second piece!

  • 1 egg

  • 160 g brown sugar

  • ½ dl vegetable oil

  • 3 tsp cinnamon

  • 1 tsp natron

  • 2 tsp baking powder

  • 4 tsp vanilla sugar

  • 1 tsp cardamom

  • Pinch of salt

  • 300 gram grated squash with peel

  • 250 gram all-purpose flour

  • A handful of chopped nuts

Cream Cheese

  • 150 g cream cheese, or Arla Unika

  • 70 g soft butter

  • 90 g powdered sugar

  • 1 tsp vanilla powder

  • Grated peel of ½ - 1 organic lemon

  • A dash of lemon juice

How to make it

  1. Turn on the oven at 175 degrees celsius, convection

  2. Whisk eggs and brown sugar together till you get a light and airy mass

  3. Carefully mix the rest of the ingredients into the sugar and eggs, but leave out the flour

  4. Put the flour through a sieve and into the bowl of cake ingredients, and gently mix it in

  5. Pour the cake mix into a greased cake tin, and put it in the heated oven for around 35-40 minutes

  6. While waiting for the cake, you can prepare the cream cheese ingredients

  7. Whisk together all of the ingredients, and season to taste with extra lemon juice, if needed. Then refrigerate

  8. When the cake is done, take it out of the tin and let it cool off completely before covering with cream cheese

  9. Serve the cake cold, with a nice layer of cream cheese on top. We promise you will love the result!
