Tomato & Onion soup

This tomato soup recipe is simple and made with fresh ingredients such as onion, tomatoes, fennel and topped with basil. This easy soup can be prepared in 30 min and you can use any kind of tomatoes!

  • 2 onions

  • 2 fennels

  •  2 cloves of garlic

  • 3 cans of diced tomatoes + 3 cans of water

  •  ½ dl oyster sauce

  • 1 tbsp. of chopped thyme (if you have it)

  • 5 bay leaf’s (laubærblade)

  • 3 cubes of veggie broth

  • Olive oil

  • To taste: lemon juice, salt, pepper, oyster sauce

  • Serve with: Bread, sour cream and fresh fennel and basil on top


  1. Cut fennels and onions in quarters (no need for fine chopping, because everything has to be blended in the end).

  2. Add a bit of olive oil to a warm pot and add your fennels, onions and whole cloves of garlic.

  3. Roast for 5 minutes.

  4. Add tomatoes, water, salt, pepper, oyster sauce, broth & bay leaf’s and stir everything together. Let it simmer for 20 minutes.

  5. Remove your bay leaf’s and blend your soup. Add more salt, pepper and oyster sauce if needed, and maybe a bit of lemon juice.

  6. Serve hot with some bread & butter, and some fresh fennel, sour cream & basil on top.
