Vegan Burger


A vegan burger with different veggies, in front of some burger buns

Burger patties: 4 hours

Burger buns: 45 min. 


  • 25g fresh yeast

  • 300 ml lukewarm water

  • 2 tbsp olive oil

  • Pinch of salt

  • 1 tbsp sugar

  • 150g graham flour

  • 350g all-purpose flour

  • 3 cloves of garlic

  • 2 red onions

  • 1 eggplant 

  • 1 can black beans

  • 1 tbsp miso (optional)

  • 2 tbsp soy sauce

  • 1 tsp chili flakes

  • 1 tbsp paprika

  • 2 tbsp thyme

  • 2 tbsp cumin

  • 3 tbsp chia seeds

  • 130g all-purpose flour

  • Olive oil

  • Salt & pepper to taste

    Burger fillings
    • Red onion

    • Oakleaf salad or any kind of lettuce 

    • Tomato

    • Vegan mayo



    1. In a bowl mix the yeast and the lukewarm water, mix it around until the yeast is dissolved. Then mix in the salt, olive oil and sugar until it’s dissolved. 

    2. Add in the flour little by little and mix it around. When all the flour is in, begin to knead the dough for around 10 m. When you’re done, put the dough back in the bowl. Then leave it to rest for 3 hours or more with a tablecloth over it. 

    3. When the dough has rested, turn on the oven on 200 degrees. 

    4. Then take the dough out of the bowl and form 6 buns with it. You can drizzle a bit of olive oil on top and sprinkle on some sesame seeds. Put the buns in the oven for around 20-25 m., when they’re done, leave them to cool for 10 m. - and then they’re done! 

    Burger patties:

    1. Chop up the garlic, onions and eggplant in medium chunks and fry it on a pan on medium heat with some salt and olive oil for 10 m. 

    2. Add the fried veggies to a food processor with all the listed ingredients except the flour. Turn on the food processor for 5 m. until all the ingredients are mixed well together. Add the mixture to a bowl and add in the flour and mix it in well. Then leave the ‘dough’ in the fridge for around 15 m. 

    3. When the 15 m. is up, take out the ‘dough’ and begin to form them as burger patties. 

    4. Warm up a pan with some olive oil on medium heat, then begin to fry the patties on each side for around 4-5 minutes, there should be enough dough for around 6-8 patties. 

    5. And then you’re ready to assemble the burger with your homemade bun and patties. You can use fresh tomatoes, oakleaf salad, red onion and mayo to make your burger - or anything else that you prefer!
