Vegan Lemon Cookies

This super simple cookie recipe,  doesn’t require a lot of ingredients or time. It rewards you with delicious and lightly sweet treats that are vegan too! Keep in mind that the cookies can still feel a bit soft, even after they’re done in the oven, and won’t really crisp up until they have been allowed to cool down. It’s hard to resist the temptation to just bite in right when you take them out of the oven, but patience is key!

  • 225 g milk-free / vegan butter (they can, of course, also be made from regular butter)

  • 160 g of powdered sugar

  • 350 g of wheat flour

  • 2 tsp. vanilla sugar

  • The peel from 1 organic lemon

  • 1 tsp. baking powder


  1. Whisk butter and powdered sugar together till it gets a soft consistency. 

  2. Add the grated lemon peel, vanilla sugar, baking powder and flour.

  3. Put the dough in the freezer for 30 minutes, and preheat the oven to 180 degrees C.

  4. Roll out small individual balls from the dough, and press them flat on a lined baking tray.

  5. Baking time depends on thickness, but I bake mine for 8 minutes. They should get a bit golden around the edges. Then set aside to cool.

  6. Now, all you need to do is prepare your favourite coffee or tea, and enjoy the delicious cookies.
