Veggie Stew

DINNER / 50 MIN / 4 PAX / EASY

INGREDIENTS

  • 2 tbsp. olive oil

  • 1 tbsp. butter

  • 1 finely chopped onion

  • 1 finely chopped garlic clove

  • 500 g chopped veggies (use what you have.. I had carrots, sweet potatoes, zucchini and butternut squash)

  • 3 thyme twigs

  • Veggie stock

  • 6 stalks chopped palm kale

  • Parmesan for serving

HOW TO MAKE IT

  1. Start by adding oil and butter to a pot. Then add garlic, onion and thyme and sauté until golden.

  2. Then add the chopped veggies and sauté for 7 minutes. Then veggie stock so it covers the veggies.

  3. Let it simmer until the veggies are tender. Then blend 1/3 of the soup.

  4. Put the blended soup back in the pot.

  5. Add sliced kale and a lid. And let it simmer until the kale is soft. Add salt and pepper to taste.

  6. Serve with pepper and Parmesan before you eat it.
